Have you ever felt the need or have actually removed career experience and possibly education from your resume? I feel like many companies are rejecting my application due to being over qualified.
Yes! I’ve removed years of service to last 15 only. Unfortunately not just over-qualification but ageism is an issue too.
résumé etiquette says , you don’t need to list anything prior to 10 years of work history, however if it’s relevant you can list the company the dates the title of your job but your headline and your beginning summary should highlight your characteristics and talent so it’s the first thing a recruiter or hiring manager sees and peaks their interest to

but I agree with the other comment you need to Customize Your résumé to every job you Apply for.
I saw the difference in the responses when I did that specifically and the traffic increased the responses To my application
Morning! I don't purposely remove careers off my resume. But I do have two resumes:
1. Work-based resume - On it, I no longer list details from my first two jobs - simply that I worked there and the dates I worked. Why? Because I've been at my current job going on 19 years.
2. Teaching-based resume - I hope one day soon to be a teacher full time. In the meanwhile, I've been tutoring for the past 8 years. This resume is tailored to highlight my tutoring and education, placing my current full-time job in the background.
I don't have a chance/need to bring my work resume out very often. I'd say 90% of the time someone will comment on my only listing one job. And several people are truly surprised when they note I've been at my current job as long as I have!
One has to tailor the resume for the job. I'm a former Teacher but I omit that because I am changing careers. I experienced that too until someone advised me to leave it off and I was also faced in interviews with oh so your a Teacher.
Yes, I only show last 15 years of experience.
Any experience over 10, 15 years - depending on how relevant - needs to be lopped of the resume.
I took my law degree off my resume. It had nothing to do with the jobs for which I was applying, and if I got callbacks for interviews it'd bring up questions for which there were no good answers at the time, preventing me from getting the jobs for which I applied.
Employers don't usually reject people for being "overqualified" in the sense that the average person thinks. You usually have stuff on your resume, in those instances, that have nothing to do with the job you're trying to get. It's okay to tailor your resume with directly-related experience and education, as long as you don't have big gaps. But when you do apply to a job for which you have more related experience than you need, that's where a cover letter explaining why comes in handy, i.e. wanting fewer hours, changes in life circumstances, etc.
yes - I have removed career experience from my resume. I'm in my late 50s, I started in my current career (high-tech startup in the industrial and healthcare industries) in the mid 90s, and my resume covers my career from the mid-2000s, but that's mostly to cover the fact that I've older :)
