In addition to approximately 2.5 million square feet of exhibit space, 225 meeting rooms (more than 390,000 square feet) handle seating capacities ranging from 20 to 2,500.
Position Overview:
The Senior Beverage Manager is a strategic, senior-level leader responsible for the overall vision, execution, and financial performance of beverage operations at the Las Vegas Convention Center. This role provides direct oversight and leadership to the Beverage Supervisors and is accountable for large-scale, high-volume beverage programs, including pop-up bars, specialty concepts, and temporary event-based operations.
The position requires deep expertise in union labor environments, logistics planning, inventory strategy, and innovative beverage program development. The Senior Manager / Director ensures operational excellence across set-up, service, and breakdown phases while maintaining compliance, cost controls, and exceptional guest experience standards.
Key Responsibilities:
Strategic Leadership & Oversight
Provide senior-level leadership and direction to the Beverage Supervisors and the beverage leadership team.
Establish short- and long-term strategies for beverage operations aligned with venue goals, client expectations, and financial targets.
Act as the primary escalation point for complex operational, labor, and client issues related to beverage services.
Drive a culture of accountability, professionalism, safety, and continuous improvement.
Beverage Program & Operational Excellence
Oversee all beverage operations, including permanent and pop-up bars, premium experiences, and large-scale convention and event activations.
Ensure seamless planning and execution of bar set-up, service, and breakdown using union labor.
Partner with Operations, Culinary, Sales, and Event Services teams to align beverage offerings with event requirements and client contracts.
Evaluate and approve bar layouts, equipment needs, staffing models, and service timelines.
Union Labor & Workforce Management
Provide senior oversight of union labor utilization, ensuring adherence to collective bargaining agreements (CBAs) and labor standards.
Collaborate with labor partners and internal stakeholders to optimize staffing efficiency while maintaining service quality.
Support the Beverage Manager in coaching, corrective action, and performance management within union guidelines.
Ensure proper training, safety compliance, and operational readiness of all beverage staff.
Financial Management & Inventory Strategy
Own beverage department budgets, forecasts, and financial performance.
Develop and oversee advanced inventory control systems, par levels, and procurement strategies.
Analyze cost of goods sold (COGS), beverage margins, shrink, and waste to drive profitability.
Approve purchasing strategies and vendor partnerships, ensuring consistency, quality, and cost effectiveness.
Logistics, Warehousing & Infrastructure
Oversee beverage logistics, warehousing, and distribution processes for high-volume, multi-event operations.
Ensure efficient movement of product, equipment, and supplies across the convention campus.
Implement scalable systems for tracking inventory, equipment, and labor deployment.
Lead continuous improvement initiatives focused on efficiency, sustainability, and operational scalability.
Innovation & Program Development
Lead innovation in beverage concepts, menus, and service models to enhance guest experience and revenue.
Introduce new technologies, systems, and operational best practices to support pop-up and temporary bar operations.
Evaluate trends in beverage programming, sustainability, and premium offerings.
Compliance, Safety & Risk Management
Ensure compliance with all local, state, and federal regulations, including alcohol service laws and safety standards.
Oversee responsible beverage service programs and certifications.
Partner with Risk Management and HR to mitigate operational and labor-related risks.
Qualifications:
Required
3-5 years of progressive leadership experience in beverage operations, hospitality, or large-scale event venues.
Proven experience managing managers in a complex, high-volume environment.
Strong knowledge of union labor environments and collective bargaining agreements.
Expertise in logistics planning, inventory control, and financial management.
Demonstrated ability to lead large teams through complex, time-sensitive operations.
Preferred
Experience in convention centers, stadiums, arenas, or large multi-use venues.
Familiarity with enterprise inventory and labor management systems.
Background in beverage program innovation or premium hospitality concepts.

Other Requirements:
Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly-quartered environment.
Hours may be extended or irregular to include nights, weekends and holidays.
