Electric Roaster Stir Fry

This was today's meal, all donated ingredients! 1/3-1/2 cup oil in the bottom of the roaster, leave it off. Cut your head of cabbage and other cruciferous vegetables half an hour before consuming or cooking for more health benefits (look up hack and hold method). First things went into the oil were 4 good-sized red onions, diced, half bunch minced celery, 7 matchstick-cut carrots, toss and add heat all the way, sprinkle on some salt, ginger, garlic, pepper, and lemon pepper. Let those go a good 30 minutes, stir and add the cabbage, and a 16 oz package sliced mushrooms, tossing to coat, pour in a cup of water. Let that sit at 350 or higher, stirring every 30 minutes for about an hour, or more until cabbage and carrots are tender enough. Add in precooked pork tenderloin bites and juice, once taste is adjusted and everything back up to heat, it is ready, you can drop the roaster down to 150-250 depending on how often you have to open roaster to serve. I precooked rice to serve with it instead of gumming up the electric roaster while it sat there for the hour and a half that we serve.

About this group

When running a Kitchen off donated items that may be different from week to week, it's good to be flexible and be able to ask for help. There are also outside factors that may be in play as well, such as volunteers, training, storage, equipment, etc. Come to us with any questions and ideas and we will answer and be appreciative, and help if help is needed.
