Quick Bread

This is what I made for work this weekend for this week! Made 4 blueberry pumpkin, 2 pumpkin can chocolate and pumpkin, 1 proper pullman of plain but spiced, 2 small loves plain, no seasoning, one has cinnamon candies cooked into the top. Once I get more work sugar will do a couple with raisin in them, and a couple with peanut butter chips. Also making black and pinto beans with ham and rice; cabbage and ham dish, and a curry. Sorbet, fruit, or the bread on the side. Basic (Pumpkin) Quick Bread 3 1/2 cup flour 15 oz can pumpkin (or other fruit/veg shred) 1/2 cup apple sauce 1/2 tsp salt 2 cup sugar 2 tbsp baking powder 4 tsp lemon juice Mix will be clumpy, it is ok, do not try to make smooth batter, only try to make just mixed muffin-like batter. 375f for an hour (altitudes around 4,000 feet) start checking at 45 minutes and make sure not to burn, but take it right to the edge to thoroughly cook Makes 2- 7 x 3 loaf pans. 7 inch pie pans-2 12 inch pullman-1 pumpkin cans-2 1 dozen muffins Other options -Add 1 cup walnuts -1/2 tsp nutmeg, cinnamon, ginger, or allspice -1/4-3/4 cup blueberries or other similar cut/shredded fruit/vegetable (cherries, apple, pineapple, carrot, zucchini…), place those on top and push in a bit -Alternate some sugar for a different sweetener -1 cup chocolate chips -Give the top a crumble with a mixture of butter/oats/brown sugar ***can double this recipe for large 29 ounce pumpkin cans
