Best vegetarian recipes (that aren't salads)

I recently decided to cut out meat from my diet and am struggling to come up with creative meals! Looking for recommendations from any vegetarian and/or vegan FGB'ers!

I've found that, rather than seeking specific recipes, looking at vegetarian recipe collections is a more effective way of discovering cool new options. My absolute favorite is Thug Kitchen - I have the cook books, but you can also find their online recipes to give them a try before you delve into their curse-laden recipes. Additionally, Simon Rimmer's "The Accidental Vegetarian" series of books offers some more complex options. Yotam Ottolenghi also put out a book called Plenty that is a collection of veg recipes. This one is really more of a browser than a follow the instructions book, though...I have only made one recipe out of the book as it is written, but I HAVE modified many of them to be more simplistic (I just don't have the time or money to collect 10 different types of soy sauce, so I use whatever I have on hand instead). Feel free to drop me a DM and I can send you more recipe book ideas - these are just some good general ones to get you started. Also, a stop by your local book store will give you a mess of options. If you don't want to go all in on cookbooks just yet, there are some GREAT veg blogs out there. I'm gonna list out some of the top that spring to my mind below, but to discover your own one of the best things to do is hop on Instagram and search for "vegetarian" or "vegan." Lots of stuff will pop up, and the vast majority of these accounts will have blog sites associated with them. One thing that I would encourage you to do as you begin this diet journey is to set aside your previous notions of food. The first time I saw something bizarre like "spiced parsnip cake" I was turned off, but now that's the kind of thing I gravitate towards because it's so dang good. Some blogs to get started with -Rabbit and Wolves -Oh My Veggies -The First Mess -Earthly Feast -Sprouted Kitchen -Green Kitchen Stories -Naturally Ella -Vegetarian 'Ventures -Cookie + Kate (Also lots of good seasonal eating guides, which, depending on your motivations for cutting meat, can be incredibly helpful) - Love & Lemons -With Food and Love -101 Cookbooks -Food Heaven Made Easy -And I'm going to mention Thug Kitchen again, because all of their recipes are so tasty and completely vegan.

There are a lot of "meat replacement" ideas out there, but I've had the best luck with making regular food I like and just not having meat in it. Spaghetti, no meatballs. Pancakes with a side of fruit. Look to Mediterranean and Middle Eastern cuisine too - TONS of meatless options. Tabbouleh is probably my favorite.

There are a lot of vegetarian pasta recipes, such as vegetarian lasagna, ravioli with mushrooms and asparagus, parmesan-crusted cauliflower over linguini with marinara sauce, bowtie pasta with sun-dried tomatoes and broccoli, etc.

I love veggie burgers, anything pasta, and eggplant parm!! not the heathiest but definitely delicious
