I lost my mom on 28Nov2018 and only returned to work early Jan the following year. Fortunately I had sufficient bereavement leave and annual leave (and study leave which I had applied for prior to her death so I can complete my Masters thesis).. I had to stay home longer to finalize her estate and get my baby brother ready for university. I speak about it openly now coz I have healed from the trauma of losing a loved one (but not from the pain of losing a mother).. I say this so you can have a perspective of how much death changes your life. This is not the time to throw shade at someone carrying so much, however its an opportunity of being a team player. When one player is down, unfortunately the rest of the team (in this case YOU, has to carry the load). If you want to quit, that's on you and will show to be in bad taste (i.e., how will you show you have the capacity and maturity to deal with a difficult situation if you quit the moment it gets tough?).. Fortunately & unfortunately, we work with humans (with their full share of struggles) and not robots.

To answer your question about anyone taking two weeks of bereavement leave - when my mother passed away out of state in 2022, I was away from work for 3 weeks. The first two weeks was spent at her bedside before she passed away and then planning her funeral service. The third week was for quarantining and recuperating for the COVID that I contracted while I was with my family. I am thankful that my employer never questioned my need for the time, but allowed me the time and space to care for my mother, my family, and myself.
I wholeheartedly agree that your mental health is important, to question the time your coworker needs to mourn is poor form.
Your concerns about the work getting done and the additional load that you're carrying should be brought to the director's attention, which it seems that you've done. If the director isn't willing or able to provide assistance or correct behaviors, it would make sense that you part ways with your employer.
