Recipe, or Wing It?

For those of you who cook on a somewhat regular basis, what do you do most often? Make your tried-and-true meals (with or without a recipe), follow new recipes to the letter, or just totally wing it? (Or something else not mentioned). Excited to see your cooking habits!

I used to follow recipes religiously at first and would tweak them as I got more comfortable with them. Now I have a 4 month old and am lucky if I get 30 minutes of uninterrupted time to throw together a meal.

I cook 3x a day because of my food allergies...so I tend to have basics in my fridge/freezer at all times. I order all my protein from a farm, and I buy a lot of organic frozen vegetables. When I prepare a meal, I switch out my seasonings and wing it making something very easy and sensible. I tend to try a new recipe on the weekends and add to my recipe rotation. I also separate them by season so I do not eat warming foods in the summer.

I almost always wing it. I have a couple of tricky allergies, so even if I follow a recipe I'm switching out an ingredient or two most of the time. I cook almost all of my meals that are uncooked ( so, not fresh fruit/nuts/chocolate) because it's hard to get me-safe food, so I know how to make dishes I'll enjoy. For a special treat though, I'll look up a recipe that fits the veggies in this week's CSA and make stuffed zucchini or something else fun. It's nice to get another person's flavor profile, and helps me be a more diverse cook.

I usually use a recipe as more of a guide and then add extra ingredients/spices if I want to. And I rarely measure my spices (unless it's something with a lot of kick!)

When I don't have an idea in mind of what I may want to cook, I'll do a recipe search, maybe on Epicurious or do a more general Google search. I might start with an ingredient or two that I know I want to use, and look up a few different recipes. I don't typically follow a recipe to the letter - in fact, I like to mix up a few things that I found from a few different recipes, and make the dish my own. If it's an ingredient I don't use frequently and I don't have a firm grasp on its cooking times, I might follow the recipe more strictly. Was just wondering what other people do! :)
