Best go to meals for meal prepping!

Hi ladies, what are some of your favorite posts for meal prepping? I come home too tired to cook most days and barely have the energy to come up with something for dinner. what are some of your favorite meals or tips for meal prepping?

I do pint jars for breakfast and lunch. Breakfast is oats, chia, and berries with water. Lunch is chicken, rice, veggies, and sauce. I actually have a blog series up about meal planning if you want to check it out. http://ellejayathome.com/category/meal-planning/

What has helped me in pre-planning is having certain meats cooked in advance and ready to go. Once a month I've been doing a large grocery shopping trip, and when I come home I will brown ground beef, cook sausages or boil and shred chicken. I package them in meal-size portions and freeze them - securely, twice-wrapped to prevent freezer burn. Doing this ensures that I can have a cooked meal done fairly quickly. The other night we had spaghetti and meat sauce ready so fast! While the pasta was cooking, I defrosted the beef (took almost no time at all) and made a few slices of garlic bread. This method has been working out great for us!

I love to make BIG soups and put them in mason jars for the week. Soups are so low maintenance to cook they make me so happy!
