I enjoy writing down my goals for the next week. What I would like to accomplish etc. I look at my overall goals for the year, 5 years and ask what can I do this week to work towards that goal. Think of a Monday as a mini new year.

I typically make a "to do" list at the end of each business day so that I'm ready for the next day. Perhaps if you had a "week in review" on Friday afternoons, that would help you prepare for Monday without anxiety. Think about planning fun or relaxing events o Sunday afternoons. Alternately, plan them for Mondays, so that you have something to look forward to!
