Due to Covid-19 and restructuring, the scope of my work has increased a great deal.
I asked my supervisor for an increase based on the job I’m doing. She was very receptive and said she would work on it. It’s been over a month and nothing. Not sure of next steps...

First of all, good for you for advocating for yourself! It never hurts to ask the question. I would suggest gently bringing up the topic at your next 1:1. It could sound something like, “just want to circle back with you regarding our conversation about my compensation. Is there anything you need from me to help make the case?” Then leave the ball in her court to give you an update.

Leah had great advice and during this time I'd add to be patient. I'm not advocating for underpaying employees in any way but if the restructuring was done to help the company vis a vis the bottom line during a pandemic then do keep that in mind.
