Quarantine Meal Prep

If you are at home, or an essential employee going to work during this wild time, have your cooking habits changed? What foods have you been stocking up on? I initially bought a lot of of frozen and shelf stable foods, but am finding I'm eating way less healthy than I typically would. I tried to make a shift about mid-week to try to eat a few more vegetables, but would love to hear what others are doing!

I definitely am meal prepping and have not had any issues with getting fresh veggies. Sundays - 75 minutes max - four boneless breasts of chicken baked, hard boiled eggs, chop veggies for salads, roasting and stirfry, make two dressing, one for salads and one to put on meet and cooked veggies, one other meat like flank steak or pork loin. Voila, I have food for days. Let me know if you would like mne to talk you through it.

I am grocery shopping only one time a week to avoid people. Most fresh fruits and vegetables need to be eaten within the first 3 days, then I rely on canned foods- lots of beans and rice, pasta, Mexican is good. I make sure I have some treats like chocolate so I'm not tempted to run to the store!
