Creative budget meals...what are your faves?

Hello there ladies, With all of the coronavirus panic and self-quarantines, I know most of us will be spending time at home. With all this extra time, I'm left with a love of creative energy and no where to place it in my job until I'm back in the office. Which got me thinking...why not get back into cooking? I tried going to the grocery store and ended up snagging 5 canned goods (a GREAT turn out because all of the shelves were empty minus 3-4 aisles that weren't food related). With limited ingredients and resources, what are some of your favorite budget friendly meals? I LOVE cooking and baking, so share your recipes and let's get cooking!

Roasted veg. (cauliflower, Brussels, taters, carrots, mushrooms) wash, cut veg, toss in small amount of oil, bake 425 about 20 minutes. it is the goto, thankful it is healthy, tossing cooked garbanzos on there make it a roasted meal/salad.

SOUP STOCK. I have a soup bag in my freezer and have been collecting chicken bones and the ends of onions and cucumber skins for a couple of months. I'm so excited to make some this week!

I recommend https://www.budgetbytes.com/ for yummy and cost-effective recipes. I have been using the website for years and it hasn't let me down yet! Some budget meals off-hand are: loaded baked potatoes, homemade pizza, fritatas, overnight oats, and it's always good to have some hard boiled eggs on hand for snacking!

Love a bechamel - for au gratin potatoes, layered baked pastas, pan tossed veggie topper... And, we almost always have noodles on hand and can whip up a Thai-inspired peanut sauce to add variety to the typically Italian pasta rotations ?

I like making a version of chana masala. Chickpeas, canned diced tomatoes, onions, garlic and spices are the base for it! My other budget meals are kimchi baked fried rice with eggs in it https://www.today.com/recipes/sheet-pan-kimchi-fried-rice-baked-eggs-recipe-t173872. Also, breakfast for dinner!
