Quick + healthy work lunches?

Currently feeling SUPER burnt out on salads. What are some of your favorite healthy lunch ideas that are easy to throw together on hectic mornings?

6 oz. of fresh veggies and 4 oz. of hummus, 4 oz grain (rice or Triscuts), 1 piece of fruit. I make them up for the whole week.

Think budda bowls! They are a great make a head and in volume option. Just cook up your favorite rice or rice alternative. A couple of different versions of vegetable medleys (or purchase the steamable). Then cook up your favorite protein (chicken, turkey, shrimp, fish, scallops, steak etc). ENJOY!!!!!

A quick and easy recipe that you can do the night before is cauliflower rice with chicken. I use a rotisserie and remove the skin. Then I rice cauliflower. You can buy it already riced too. I put it all in a skillet with some snacking peppers and scallions and a little bit of sesame oil until it's warm. You can then quickly microwave it at work. Simple, tasty and healthy.

Def soups, or, roasting a bunch of veggies and then making some kind of protein and then bringing that w/a starch if you want. Example: roast a tray of cauliflower, carrots, zucchini squash; eat with a thing of tuna (if you're lazy), or make a tray of chicken drumsticks. Either serve alone or with rice, potatoes, or anything else!

I bought a steamer, BEST THING EVER! I come home throw my veggies in, clean up or take a shower and then they are done. You can also get multi tier, which is convenient if you are meal prepping for a couple of days.

I also do meal prepping on Sundays - soups are the easiest, although rice, protein, and vegetables in a pyrex bowl is also easy.

My favorite is cucumber with a cream cheese that has veggies and herbs. I love avocados and usually do some sort of avocado salad with tuna and miso salad dressing. Other good ones are soups that I make batches of and freeze them. But I do agree with LadyPele go to Good Housekeeping.

Mine is a couple of yogurt cups, a granola bar (that you'll break into pieces) and bite size fruit such as berries, grapes, pineapple chunks, etc. Layer into a paper coffee cup in the break room at work and eat with a spoon. It's a do it yourself Yogurt Parfait.
