Cooking dinner when you can't cook

I want to make a nice meal for my pescatarian boyfriend for his birthday but I am an awwwful cook. What's something I can make besides simple pasta that won't end in disaster?

"Way back when tigers still smoked" and I still ate fish, I found that broiled salmon with some kind of sweet relish (or even just a nice, store bought jam) over some buttered wild rice with a side of steamed veggies was not only delicious, but also super easy and, so long as you don't forget to check the fish, really hard to mess up.

You could pop salmon and veggies in the oven with a little olive oil and lemon. Very nice summer dinner!

I think stir fry is the best easy dish because you can always add more sauce or more veggies/stuff if something goes wrong! Try a tofu/veggie stir fry with garlic soy sauce and any mix of vegetables around (like zucchini squash, eggplant, bell peppers, mushrooms, etc).

can't go wrong with a fancy salad! I'm a big fan of greek salad and it's hard to get wrong. ratatouille is also super easy to make, and delicious over rice, pasta, etc.!

Shrimp is a super quick cook! (Here's bunch of shrimp recipe ideas: https://www.pinterest.com/themealplanningmethod/healthy-shrimp/) And I would encourage you to find a recipe with any accompanying video -- like those Buzzfeed Tasty videos -- to allow you to see the recipe step-by-step and not just the end product. Delicious does not have to be fancy! :)

You can totally do it! Make some type of salad (Pinterest is a great resource), scallops are super simple (olive oil or butter in a pan, let it get hot and sear for 15-25 seconds on each side and they’re done), and pasta with a little olive oil, shredded Parmesan, and red pepper flakes!

I actually saved this easy recipe earlier this week and I think it’s a perfect thing to make! It’s only four ingredients but looks professional and tasty.
