I feel like I've resorted to pasta at least three times this week...any suggestions for a different dinner base/carb?

I get stuck on potatoes. Microwave them, then cut, season, and cook in a pan for home fries; precook, set in fridge in container, shred and fry up like hash browns and mix ins for both. left over spaghetti, chili, Mac and cheese, stroganoff, salsa, etc plenty goo for a loaded baked potato, yes I resort to microwave or boiling at home. or toppings on top mashed potatoes like cheese and black olives, refried beans and an egg. I am vegan so I do vegan versions of this stuff. I also really like doing frozen fruit, protein powder, juice, ice smoothies...or frozen protein coffee- if you have a blender. I used to mix yogurt and juice half and half for an on the go ting-just don't look at it.

Other quick grains that you might try: quick cook brown rice, quinoa, bulgur, couscous. And a possible workaround might be on days/nights when you have the capacity, make up extra servings of your "longer-cook" grain/starch (like potatoes, wild rice, etc.).

Still love it, doing it for work 3 days a week and at home. At home we are living off what I stored for winter...Iknowright (beans tomatoes, vital wheat gluten, tvp, curls)? - fresh fruit and veggies when we see what we want, juice, and almond milk. At work I do all the cooking from donated goods, also interesting. At work I am able to ask others "here, taste test this, tell me what it needs". I figure if I let others flavor it for me occasionally, they can't get sick of my cooking. Introducing my diners to a mild curry tomorrow. Turned frozen donated fruit into sorbet, there at work- It's hot so I think people are enjoying them!

I'm definitely tired, also tired of tasting my home cooking haha, so I've been granting myself one delivery order once a week just to change things up!

Definitely starting to hit my limit a bit! Although I meal prepped a new greek pita recipe for lunches this week and that has definitely helped with my cooking exhaustion
