Here are items that I consider necessary on Thanksgiving: 1. Sweet potato or yam side dish. Look up yam-carrot purée online. 2. Cornbread dressing (i.e. like stuffing, but cooked independently of the turkey.). Numerous recipes online, but here’s mine— adapt as needed and check directions vs published recipes:. -Make 1)cornbread and (if desired) 2)turkey stock, optional (can make your own from turkey necks or buy pre-made) 24-36 hrs prior. Leave cornbread out to dry out overnight so that it will better absorb other ingredients. If broth premade, refrigerate until needed. (You will want to moisten cornbread before cooking: see below for options.) -Day of or night before: cut up and sauté mushrooms, garlic green and red bell pepper, onions and/or scallions until tender, in combined amount equivalent to ~1/4 to 1/3 of cornbread. Mix these with their juices through cornbread. Add turkey broth if using. Alternatively could add some butter/margarine or chicken or vegetable stockto moisten. You want stuffing mixture to be moist and flavorful, but not tremendously wet. -Season cornbread/veggie/broth (or butter/margarine) mixture with thyme, salt and/or black pepper to taste, and a small amount of cayenne to add a kick. (Because of the cayenne, be judicious in your use of black pepper, so as not to over pepper.) -Place seasoned dressing in an oiled or buttered casserole dish. Bake at 350 until heated through and top slightly browned. 3. I go for uncooked cranberry/orange relish (versus cooked cranberry sauce.) Use the recipe on the side of the cranberry package, but add sugar gradually until you get the desired sweetness. I typically use only 1/3 to 1/2 the recommended amount of sugar. 4. Sautéed green beans, possibly with almond slices. 5. Desserts: not a day to be abstemious. Pies always work well. My go-tos are pecan and apple, with vanilla ice cream and/or whipped cream for those who want them. Pumpkin pie and a chocolate dessert are always welcome, too. 6. Does your dinner include hors d’oeuvres? My family always includes a platter of cold shrimp and cocktail sauce— a tradition established by my mother.

Ceci and All, I just found something new and interesting that would be great for Thanksgiving:: Recipes from Native American chef Sean Sherman, a/k/a the Sioux Chef. Google Sean Sherman recipes and you’ll find a new NY Times article with 10 fantastic recipes. There are some additional recipes elsewhere online and he has a cookbook out. Great way to honor the Native American role at the first Thanksgiving!

I have several good recipes. Just depends on what you want. I have an incredible pasta salad one. You get a large bottle of meijer brand buttermilk ranch dressing, mix it with a cup of hellman's mayo and a cup of sugar. Salt and pepper to taste. Mix up real well to make then sauce. Cut up a large head of broccoli and one of cauliflower, dice half a red onion (more if you really like onion) and then cook a box of rotini by the box instructions. Drain the pasta and then mix the sauce with the pasta and cut up veggies. Mix well. Let it sit overnight in the fridge and then mix again before serving. It is amazing.

I’ve definitely tried a broccoli and cheese casserole but haven’t mixed it with cauliflower, pasta and veggies! Love this.
