I had a job where it wasn't exactly a 'bait-and-switch', but the duties I ended up being given to were WAY out of what was talked about upon my hiring, and they refused to discuss other options with me or change anything, i.e. 'you'll figure it out/you can handle it/it has to be done/ you're the only one here'.
My employers may not have seen it as a red flag, but I certainly did. I started looking for other employment not long after starting to work there.
