I personally would not. I am all for getting paid what you are worth but in this day of uncertainty, I just wouldn't.
We think we are irreplaceable but in reality, we can all be replaced. I have seen it hundreds of times. We think losing a certain employee will crash the business. Sure we stumbled but within a month we were smooth sailing again.
Sometimes things just are not fair. They are not going to always go like we want them to. Heck, I think I am worth twice what I make and so do a bunch of others but in reality, I am not going to get it unless I move up.

Depending upon who your boss and employer is - and depending upon their budget, they may not have the ability to provide an additional increase. As a manager, I may be inclined to take your disapproval of the 3k rasie and recommend seeking employment elsewhere as my budget doesn't align with what you seek. I always set the expectation on the first day that employment works both ways, employees always have the right to submit their two-week notice, and employers always have the right to terminate at-will employment. In this case, sounds like the manager did did the best he/she could to recognize your workload and contribution. As I have always been told, if I'm not satisfied with my job and or salary, there is always someone who is standing by to take my job and for less. Are you in a position to be released from your role knowing that a successor is eagerly waiting to replace your for less money?
