Personally, I am honest in an exit interview. I also clearly tell them that if they took the time during a persons employment to care as much as they seem to do during an exit interview that maybe they wouldn't be doing an exit interview with me or others that are leaving. Then I proceed to tell them the answers to their questions. My hopes are that with blunt honesty that they will make a change for future employees to have a better work environment than what I left.

I have only had one exit interview in my career. I found that it was a list of questions which were aimed at making the company look good. When I didn' tanswer the questions the way they wanted me to (Was this the best job you have ever had?), they stopped the interview and asked me to just play along. Um, no.
