Update: I was contacted by HR on Monday to provide interview times for this and next week. I emailed dates and times but didn't hear anything back. It's now Thursday with a holiday weekend upon us. Providing an update to my post as I didn't explain that I had contacted them expressing my interest and availability. Would it be wrong to follow up again?

I would provide your available times. And not include the date that was or is a holiday. However, if you're referring to Columbus Day, that is not a national holiday for many companies or for some state agencies, I work for one and we do not take that day. If you're available that day, certainly include it. Hope it works out for you!
