I am a seasoned event professional. My title until now has been Director of Meetings. My current employer, a non-profit, has changed the way it titles roles. My question is does it matter if my title has Meetings in it? Ex Partner for Engagement Experience and Meetings...

I also managed events and had my title changed as that was a part of my job. My best advice is next to your current title in your resume in parentheses put what you do like (Event Manager). That way you’re not falsifying your title and in a background check the current company can verify your actual title. Then center below your contact infor a summary in bulleted format centered. Put buzz words of your top skills. Then in your LinkedIn profile attach your resume. Trust me it works. Not sure if that helps or guides you but hope so.

I have worked for several companies (nonprofit, hospital systems, automotive, investment) and never have I heard the title 'Director of Meetings' - I would think it would be something more along the lines of something with 'event' in it.

As long as the pay is acceptable, it doesn't matter that much what the job is called. You will list skills and explain what you did on resumes/job applications if you apply elsewhere. I think that Event Planner might be a better way to say it anyhow, as for many of us, when we hear the word "meeting," we think "half the time, that could have been an email." Whatever the job title is, you could use parentheses to explain what the title means.
