Wow, this looks delish! Is it easy to make cauliflower rice? I typically don't make my own salads because I LOVE the options at Sweet Green and Fresh & Co., but I should! I'm still in the lettuce, avocado and cheddar stages of salad-making ahaha

Super easy. I put florets into a food processor and chop it up until it's rice size. Done! So after I rice the cauliflower I throw this into a pan with some of chicken from a rotisserie (after removing the skin) and add all the veggies I'm in the mood for. I add some sesame oil for flavoring and mix it up. Then I just stir occasionally until it's warm.

When dieting what do you make that fills you up? I use cauliflower for rice and add chicken and tons of veggies. Then I add sesame oil for flavoring.

Just fyi, I love to cook healthy. I love the magazine Diabetic Living and Eating Well. Diabetic living is just really healthy recipes and they are great.
