Anyone have any career suggestions?
I have been working with a career coach and I have discovered that I want a career where I can leverage my passion for research and psychology to glean insights about human behavior and apply these insights to improve the peoples' day-to-day lives.
If anyone could suggest me any careers that would fit, I would be grateful!
Applicable role suggestions - Human Centerned Design, UX reseracher, Learning and Development design roles in Corporate, Instrunctional design, Consumer research and General Assosicate reseracher, Data Analytics. Most are tech related, but these are just ideas. You would have to look more indepth to see what might suit you best.

If you don't already, start nerding out on Simon Sinek, Brene Brown, and Adam Grant. Brene recently had both of them on her Dare to Lead podcast and it was FANTASTIC.
I, too, am so intrigued by how the mind works and drives leader, culture, inclusion, etc. I was recently laid off from my job as a trainer of leaders and clinicians in mental health. Disheartened after a recent promotion, then layoff after a new CEO started, I have been reminded by several people that I should continue on the path to developing others. That said, there are a LOT of organizational development-type roles out there. Be selective about the keywords you use in your job search - go for what you want!

What a fun fork in the road! Two ideas that came to mind based on your description: consumer research either on the pure data side looking at trends and behaviors or the sitting-in-the-back of the focus group room where you are evaluating what actual people say about a product or piece of marketing.
The other one is design anthropologist. Where you pull elements from the science of behavior and use that to build products in conjunction with a product team.
